Tubers with deep-set eyes and sucrose-drenched tongues roll in on conveyor belts, drop to the dry dirt that sucked their starch. I, Lord of quality control, of the uniform shape and size, of the unmarked skin, and the free from internal defect, snap potatoes’ translucent necks. They stole deep, filmy breaths that hollowed hearts and left glassy flesh.
